I make this Cinnabon cake for my team at work... it does taste like a Cinnabon, and they all love it, apart from one freak of nature (  ;) ) that claims not to like cinnamon...

I adore my mixer!  I even brought it with me from the US!

I would suggest anything from the Hummingbird Bakery.  I am currently making my way through their Cake Days recipe book.  The Courgette, Walnut and Cinnamon Layer Cake went down a treat at work.  The vanilla cupcakes are so easy to make and absolutely delicious.  Don't even get me started on the carrot cake.  Yum.

I made that for my brother for Christmas! He loved it. Alas, I am a filthy heathen who doesn't like chocolate (shock horror, I know) so not quite my thing.

My friend/coworker has that cookbook and she made that cake for St Patrick's Day and it was phenomenal!

I totally even forgot that I could make Whoopie pies! No idea what Shoofly Pie is or Hawaiian Wedding cake or Peanut Butter Crunshies....or 5 Cup Salad...so might have to google haha

You're just making me miss cider donuts by mentioning them! lol And Monkey Bread!!! I've told this friend all about Monkey Bread as that's what we eat on Christmas Morning at my mum's back in the US (never had it as a pudding hahaha only as a special holiday breakfast!). Absolutely LOVE iced box cake, but how do you make it without graham crackers??

Oh well, it's actually a side dish by American standards!!  I have been assimilated, because I was thinking it was a pudding now. HAHAHA

Any kind of thin, plain biscuit would work I think? Plain digestives, malted milk biscuits, nice biscuits, rich teas? Could probably also use something like Oreos, bourbons or custard creams?

haha yeah I think the sound part is what will prove it to be a bit tickier, but it is do-able! I just thought digestives were a bit thicker. While they taste almost identical all mashed up as a pie crust, I'm wondering if they'd taste the same in an icebox cake where the biscuit part gets all mushy from the pudding. If they are thicker surely they will stay a bit crispier than a G.C.? Although I can't see it being a problem by any means, just a slightly different texture.
