What's for dinner?

Home ill today...can't shake this migraine and acid reflux...so I decided to make something in the slow cooker for dinner :)

Settling with cajun chicken alfreddo. Yummmmm (hopefully). Hoping it comes out okay!

Anybody else have something yummy planned for dinner?

Completely store bought. Tomato for the kids, sweet potato and coconut for us.

I heated up a can of cheese sauce, Tabasco and oxtail and ate it with Fritos.

Will take a pic if it comes out okay and share. Bit nervous as it needed heavy cream and they only had "extra thick" in Lidl when I ran in so nervous it might ruin it...but we'll see....haha

Sainsbury's?? i've tried their Sweet Potato and Coconut and it's delicious! :)

Is that one can with all that stuff?  A can of oxtail?  Can you buy that here?

Me either but it was fantastic.

I have a whole bunch of braised oxtail and I was feeling lazy.

No. Lol. A can of cheese sauce. I added Tabasco and I added in some oxtail I braised yesterday.

I bought Fritos from Target.

I saw an ad on Facebook for Velveeta, Rotel and mince for a queso dip and since I don't have mince I felt the oxtail was a suitable replacement.  Lol.

I have an electronic pressure cooker so I sauted the oxtail in salt and pepper with a little bit of ghee. Then I added some water and popped the lid on my cooker. I cooked it on high pressure for 70 minutes then let the pressure naturally release.

I let it cool down and removed it from the bones and removed any extra fat.

You can also cook it in a slow cooker for HOURS so they break down nicely. You want the fat to render down as much as possible and the collagen to break down so the meat is just melty.

If you have a Dutch oven and it fits in your cooker you can use that as well.

Ideally, you can declaze the pan with some red wine and cook it down with that and some onion, celery and carrots finely diced. I opted to make my red wine reduction later because I wanted the plain stock for soup.

Can confirm, it was delish! Just as a warning,  the I think I used slightly too much pasta so it didn't cook as well as it should've because there's only enough "sauce" for the given pasta but was fine (just on the harder side compared to where we normally cook it to). Will also say it took about another 20-30 mins to get the pasta right (I thought it'd be quicker but it wasn't).
