Yes, include the whole thing.

The 12-month period for the payslips and bank statements can end up to 28 days before the date you submit the online application.

So, as long as the latest payslip and bank statement are not more than 28 days old on the date you submit the online application and pay for the visa, you will be fine.

Also, for a Category B, he does not need to have been employed for the entire 12 months... he just has to have earned £18,600 in that time.

For example, if you are applying in Feb 2018, but he started the job in August 2017 and he has earned £18,600 since August, but he was unemployed before that, you would supply:
- 12 months of bank statements from Jan 2017 to Jan 2018
- all his payslips from Aug 2017 to Jan 2018.


Or, say you are applying in Feb 2018, but he worked from March 2017 to July 2017, then was unemployed from July to Dec 2017, but started a new job in Dec 2017 then, you would supply:
- 12 months of bank statements from Jan 2017 to Jan 2018
- all his payslips from Mar-July 2017 and from Dec 2017-Jan 2018.
