I have only used the oven, but Chef Google has lots of suggestions.

This is the first one that came up - https://www.thekitchn.com/how-to-cook-spaghetti-squash-in-the-microwave-223928

The only thing I would suggest is that when we cook it in the oven, we slice it in half (longways), scoop out the seeds, drizzle a little olive oil on it, and set it cut-side-up. A lot of recipes I see online say place it cut-side-down, but it's been my experience that you get a really soggy result. Cut-side-up and there might be some moisture in the hollow where the seeds were, but you can pour that out. Soggy squash = yuck!

We just had the last of the spaghetti squash and meat sauce for lunch. Scooped out into a storage container, and kept in the coolest part of the fridge, it was just fine two days later. Microwaved until warm. Microwaved the sauce separately. Worked a charm, and the whole meal per serving came out to about 1.50.  It would have been cheaper if I hadn't used jarred sauce, but I was feeling lazy.  Or used less mince. And I haven't put any spaghetti sauce up this year as I haven't found any tomatos for a good enough price that looked decent enough to do it with. So Seeds-of-change sauce (2 pounds on sale at Tesco) for the win.

We use seeds of change too. It was the one with the least sugar and additives. Usually £2.30 but not too bad considering. I sometimes buy tinned tomatoes and make my own that way. :) (we did meatballs in the instant pot earlier this week with homemade sauce that way and it was delicious!)

Yeah, I'm thinking of getting several cans of San Marzanos and putting some sauce up in the canner. (No telling what the price on them will be after Brexit, either!  ;)  )

That's how my family did it, too.   Slice it, bake it cut-side up, eat.

A little secret, if you cut it the other direction you get longer pieces of "pasta".

New England Boiled Dinner aka Corned Beef and Cabbage.  Slathered with yellow mustard.

I really need to try and make some salt beef to try and re-create this.

Yes!

I am really missing uncured American bacon. I haven't been able to find a polish bacon not loaded with nitrites. :( but shredded Brussels sprouts cooked in bacon grease with bacon crumbles  = heaven to me right now. (it was my fall staple in the states)

Not gonna be the same without smoke :( "uncured" is a misnomer imo but its how they're labeled in the US when not loaded with sodium nitrite.

But can you use liquid smoke to give it a smokey flavour? (Not sure if that has nitrates or not?)

I've never tried liquid smoke! Hmm. I don't think that has nitrates, but I'm also unsure if I'd be allergic to it. I do ok with smoked meat but not so much actual smoke, I'll have to give it a go sometime.

There are a few different kinds around and readily found in the UK now.I use it in all kinds of stuff to give it a smokey flavour. Hopefully not allergic!!  [smiley=clover2.gif]

A proper carne asada burrito. From Rigoberto's, just north of Marine Corps Air Station San Diego....
