Get  monthly statements if you can. Although you only need to provide one joint equivalent piece every 4 months, it can be really tricky getting the   precise spacing that you want. If you have something that you can rely on for every single month, it make the process infinitely easier!

Yes, because you are already in the UK on a visa that permits (requires?) work, your salary can be counted toward the financial threshold.  I assume you will apply under Category A (working for the same employer for 6+ months, earning above the minimum threshold, and the employment is expected to continue).

You will need:
Your US passport
Your sponsor's UK passport
Your child's birth certificate (I'm not 100% certain what else you need for children... I think some recent post addressed to them to show they live with you...?)
The application documents

Accommodation:
A copy of either your lease (if renting), or the Land Registry document showing home ownership
If you're renting and the applicant's name is not on the lease, you will also need written permission from the landlord for the applicant to live there
If you own your home and it's mortgaged, you'll need to include the most recent mortgage statement

Relationship:
Evidence that you and your spouse have lived together, usually in the form of correspondence addressed to the both of you at the same address
Proof of continued contact/communication for any time you've lived apart (such as before you moved to the UK on your current visa)
Your marriage certificate
If there are any prior marriages for either of you, you'll also need divorce/dissolution of marriage decrees for those

Financial Requirement (Category A):
Six FULL months of payslips (this may mean seven payslips to show six FULL months of pay)
Six FULL months of bank statements spanning the same period as the payslips and showing the wages being paid in
A letter from your employer verifying the employment role, salary, duration, and start date.
Optional-but-recommended: A copy of the employment contract
Optional-but-recommended: The latest P60.

The six month period for your payslips and bank statements must have an end date within 28 days before the date you submit your application.  The employer letter must also be dated within 28 days before you submit your application.  "Submit" happens when you click to submit the online application form and pay the visa fee.  Be sure you have gathered all of your documents and that they are all in order before you submit the application and pay for it.

I don't think we have a list for FLR but the information on this thread still applies so feel free to make the list yourself and we'll let you know if anything is missing.

Can I ask.  My Visa expires on the 20th of January. 

Depending on when I could get all my paperwork I might lodge my application exactly 28 days from the expiry which would be 23rd of December.

So as far as payslips I would need 6 months correct ?

So would it be my pay packet for the following months.

July
August
Sept
October
November

We do get paid on the 30th or last  working day or the  month so my last pay slip would be on the 30th of November.

Also we print our own pay slips, so it’s not sent to us.  So would I need to have it stamped by our accountant for authenticity?

My other option is to wait for December pay and lodge the application first week of January.

Because you have to cover the exact same 6 month period with both the bank statements and the payslips, it's usual to have to provide 7 months worth of each to make sure this is the case.
The most recent bank statement and pay slip (and the employer's letter) must all be dated within the 28 days before the application date.

Payslips which are not original need to be 

ii) accompanied by a letter from the employer, on the employer’s headed paper and signed by a senior official, confirming the payslips are authentic;
