I made photocopies of all the forms I filled out so I could answer questions like this, and now I can't find the forms! Gar!
On the I-130 I remember including 2 addresses for myself. I put my US address (which like you was going to be my parents), but if memory serves there were 2 places for an address on the front page. (I've tried looking at the I-130 but I'm having problems with my adobe and can't seem to view pdf's at the moment). I assume you've got the form with you, is what I'm saying making any sense?
For the G-325A form, I only included residencies in the last 5 years until present - on the exact day I filed the form I put my current English address on as 2003-Present, or something like that. I didn't incolude my US parent's address on this form. I'd have done the same with work details, but I didn't have a job.
This is all a bit fuzzy (I wish I could fine my forms!) but we went to a lawyer and asked him these exact questions, and he made it sounds like the G-325 stuff (the geographical info) didn't need to have the US residency on it.
I hope this makes at least vague sense. Since I'm not sure about it though, it can't hurt to email the Embassy (calling is a waste of time) and ask them. It is in their interest as well that the forms are done correctly.
Sorry I can't be more help!
