What can one make with Cassis/Black Currants?
« on: August 02, 2005, 06:00:01 PM »
I've recently picked some black currants/cassis from a friends backyard (she said it was okay  :)) but now I am wondering what to make with it. She said to make juice or jam but I was hoping for something more exciting. What does cassis go well with? I have about a half a pound of them sitting on my counter and I need to use them. Anyone have an idea?

No prob!  Let us know what you end up making with them!  I love getting surprise fresh fruit like that.  I got a HUGE bucket of pears one time from a woman who was having her house painted by our work group as a charity function, and made the most amazing pear butter (like a spread for toast).

Pear butter is delicious. I think I may end up going with the pork chop recipe on the first page of the link that you sent me. Instead of using pork chops though I will probably do a pork tenderloin. The recipe calls for a cassis preserve so I may end up making the cassis into a preserve anyway. Otherwise I could make a nice sauce of sorts with some of it and make a preserve out of the rest. I still haven't decided. Either way, this will probably be our Sunday dinner later this week.
