CREAM CHEESE!!??  WOW - that sounds fantastic!  I have used sour cream before, but I'll have to remember cream cheese!  My mom would go crazy, she loves cream cheese.

I mashed them with carrots a few weeks ago - they looked so pretty on the plate and tasted good too!

I had parsnips before in the States and didn't like them!  I don't remember how I fixed them that time.

Over here, they're so commonly done with the 'Sunday roast' (which could be beef, lamb, chicken, etc) -- like many have said, roasted in the pan along with other veg such as carrots, potatoes, onions, & so forth.  They're really delish roasted like that.  When I first had them (again) at the in-laws - I wondered what they were & was surprised to find out they were parsnips, which I thought I didn't like!
