Saving money after Christmas- meals under a fiver?

Just thought it might be nice to get a thread going for some new, inexpensive recipes.

I love this one and for a family of four, it can be made for just about a fiver...

4 Chicken breasts, cut into small pieces, marinated for one hr in juice and zest of lime (2.99)

Stir fry the chicken pieces with the marinade for five minutes, add....

1 green chili, deseeded and chopped finely (.15)
coriander, chopped finely (.67)
spring onion, chopped finely (.20)
coconut milk, 1 can (.89)
sprinkling of turmeric

over rice

Anyone else have some good ideas for cheap meals?

My fave money saving meal has always been a pot of bean soup (any kind will do) and fresh bread. Navy bean soup, 15 bean soup, split pea soup...they're all luvley, filling, nutritious, and warm.  :D

Mnnn yes nice soups and any kind of potato top pie, I make a yummy one with brown (continental) lentils cooked with onion, garlic, herbs and spices, maybe a bit of red wine, delicimo!

We did a potato-topped pie last night, with chicken, leeks, mushrooms and a cream sauce.  It was lovely and will make a pack of four chicken breasts last through two meals (for a family of four).

Great topic considering that thanks to Christmas I'm already into my overdraft!  ::)

Pies are a great one!

I've got one of my fav.s in the slow cooker right now (though you can also do it in the oven in a covered dish on a low heat for about 3-4 hours too!) - mix two cans of "cream of" soup (can be virtually any kind or combination - I'm using mushroom and asparagus today) with a packet of dried onion soup and a cup of red wine (whatever's leftover!) add diced stewing or braising steak (super cheap cut!) For the last half hour add a couple handfuls of thickly sliced mushrooms and serve over rice. I also chucked in some chopped carrot and potato just because I had them to hand.

Tuna pasta

Packet of any kind of noodles or macoroni (I find the shells or bowties work best)
About 1 to 1 1/2 cups mayo
2 stalks celery chopped
1 cup frozen peas or sweetcorn, cooked and cooled
1 - 2 cans tuna, drained (amount depends on how much you like tuna really!)
salt and pepper to taste

Cook the noodles until done and rinse with cold water until cooled.  Drain well.  Mix noodles with remaining ingredients.  Serve with cheese on toast, sliced tomatoes, crisps, or on a green salad.  Tastes best when chilled overnight before serving. 

Serves at least 4.

If you like cream sauce, and are watching your weight, a can of condensed cream soup, add just a touch of milk, or dilute it with a little cream, spice it up a bit if you want, serve tossed with diced chicken over egg noodles, it's just yummy. I also do it with scallops, but that's a bit more expensive. With a toasted garlic baguette on the side, yum! (they should have a smiley that licks it's lips and drools! ;D
