What can I do with Pork Mince?

While digging through the freezer I came across a packet of pork mince that I've had for a while.  It's defrosting now for tonight's meal but I can't think of anything to do with it.
Anyone have ideas? Does it make a nice meatloaf?

I've seen some meatloaf recipes with a mix of beef and pork mince.

You could also make homemade sausage patties....there's a recipe around here somewhere, I think.

I've made sausage-like patties with them before.  Bit of fennel, sage, hot peppers ... can't remember all of it, but I did find sausage pattie recipes on the net.

Thanks Lola and Cait.  We all love sausages so I'll give it a go. 
I'm still in the process of building up my herb/spice collection- so it looks like a walk over to the in-laws to raid theirs is in order.

The new issue of Delicious has a healthy recipe for pork meatballs. I actually bought some pork mince in the last shop 'cause it looked so good! I also use it in my lasagne sauce - I do a half and half mixture of pork and beef mince.

One of my DH's favourites are Thai Pork Burgers... just pork mince, thai fish sauce, chillis... cant remember what else.

Thanks everyone for the suggestions...I ended up using seasonings that were used in the sausage recipe posted but making a quasi Shepard's pie.  I had some new potatoes that were quickly loosing their new status so I parboiled them and placed them, sliced, on top on the cooked mince mixture-that had onion, garlic, seasonings, a bit of tomato puree, and good old bisto.  Baked it for about 25 minutes. 
It was pretty good.  I thought there would be more grease from the pork mince, but it was quite lean.
