What's your Best FAST Recipe ?
« on: September 25, 2006, 04:01:30 PM »
I have a couple:

Weetabix Brownies

4 crushed weetabix
4 oz caster sugar
4 oz self raising flour
2 tbsp cocoa powder
1 packet chocolate buttons
1 egg
4 oz melted butter

Mix together all ingredients & bake for 15 minutes at 180 degrees

Chocolate Microwave cake

1/2 cup cocoa powder
2/3 cup hot water
1 cup sugar
1/4 tsp salt
3/4 cup self raising flour
1 tsp baking powder
1/4 cup oil
1 egg, beaten
2 tsp vanilla

Mix cocoa & hot water until smooth
Put all dry ingredients in a bowl, add wet ones & mix.
Pour into a bowl lined with cling film & microwave for 5 minutes.
Leave to cool a little in the bowl.

Tuna Pie

1 tin tuna
1 can mushroom soup
1 packet of instant mash

Mix tuna with soup.
Prepare the mash.
Add tuna mixture to an over proof dish, top with mash.
Pop in over for 30 minutes at 180 degrees.

We're having this tonight because I've been out all day & I can't be bothered with anything too tedious! We're adding a salad to it as well.

One of my fave used to be Taco Pie, but I haven't made it in ages. Not sure if you can get the canned chili here. It was a layer of corn tortilla chips, in a casserole pan, then a layer of chili with beans, then a layer of shredded cheese.....keep going until the pan is full, finish with a layer of cheese, and heat in oven, until heated through and cheese is melted.

Oooooooh, good thread!

Creamed Chicken over rice:

Cook rice as usual

1 can chicken - drained
1 stick butter
3-4 tbsp flour
1 cup milk

Melt the butter in a pan, then add the flour. Mix and let heat for a minute. When it starts to bubble add the milk. Stir until it starts to thicken, add the chicken and let heat through until fully thickened. If you want a  Salt and pepper to taste. This is really good and fast. I love this on a cold day.

Anything involving pasta...

Find whatever veg are in the fridge, saute in olive oil with onion, garlic and red pepper of choice.

Toss in cooked pasta.  Serve with Salad.

Worst case scenario, do it with a tin or two of tomatoes, a squeeze of tomato puree (something that's a staple in my house) and garilc.. viola... marinara sauce.  Toss is pasta.

Or add bacon.

Or just pasta carbonara.  Cheap cheerful and fast.

Just discovered these, BBQ Cups, don't know what you could substitute in the UK for biscuits..
One can of biscuits, push the biscuits into muffin tins, In a frying pan, cook some mince beef, add bbq sauce, add to biscuits, and top with a little cheese and bake..  Wonderful!

Sketti Cardinale :

Jar of Marinara
Jar of Alfredo
Pasta

1. Cook Pasta.

2. Combine Sauces.

3. Pig Out!

You can get all kinds of fancy with this, adding white wine and garlic, for instance...Usually, I'll marinate chicken and put bits of it in the sauce, or fried pancetta and mushrooms, or any combination of things you might put into normal spaghetti sauce, but it's lovely just like this, especially if you have hot garlic bread to sop up the excess sauce.

Why, thank you! ;)

Can't wait to try these...I'm always trying to come up with quick, healthy, nice tasting food for the family & have lost my inspiration before I started this thread - thanks!

Mushroom Stroganoff

Saute mushrooms in butter and oil. You can also add onion or garlic first if you like.

Add creme fraiche once mushrooms are cooked to your liking (we like them cooked but not overly so).

Season with salt and pepper and paprika. Serve over pasta, rice, or even toast!

You can fancy up with chicken or beef, too. For a real treat, saute with some wine.
When I was 5 years old, my mother always told me that happiness was the key to life. When I went to school, they asked me what I wanted to be when I grew up. I wrote down ‘happy’. They told me I didn’t understand the assignment, and I told them they didn’t understand life. ~ John Lennon
