I ended up making my chicken and dumplings in the slow cooker, but a different version then what my mom used to make. They turned out great!
Crock Pot Chicken and Dumplings
375 g. boneless chicken breasts, trimmed and cut in half
Poultry seasoning
Fresh ground black pepper
Oil
2 carrots, peeled and cut in chunks
3 stalks celery, cut in chunks
½ onion, chopped
2 cloves garlic, chopped
1 stem fresh rosemary, stripped and chopped
1 can Cream of Chicken & White Wine
1 can lower-sodium chicken broth
1 recipe Dumplings
Toss the chicken with poultry seasoning and freshly ground black pepper. Heat oil in skillet until very hot. Quickly sear chicken on each side for about 20-30 seconds. Put chicken, veggies, onion, garlic, rosemary, soup, and broth into Crock Pot. Set on high for 6 hours.
With 45 minutes remaining of cooking time, add dumplings by the spoonful to the top. Be sure not to remove the lid while the dumplings are cooking!
