Freezing Ideas
« on: February 22, 2006, 02:01:42 PM »
I am going to visit my parents in the states next month and thought I would do some cooking for them while I am there so they eat healthier and go out less. I am looking for some recipes that freeze well and even if they are abundant, I can portion them out so they can just defrost and reheat. The only thing is that they are kosher, so nothing with pork, please. Thanks for any help...and Lola's chili is already on my list  :)

I was just going to suggest chili, I'll have a think on it.

One thing I know is that my mother buys frozen chicken soup from the kosher deli for my grandparents.  I know this is not homemade, but it could be and easily frozen as well.

The latest issue of Delicious magazine has a lot of ideas for chicken recipes that can be frozen!

I've had good luck with freezing kugel.  Granted, it's not a main course, but who doesn't love a nice, warm hunk o' kugel? :)

Are you looking for complete meals (i.e. casseroles, chili) or can it be bits & pieces?  Meatballs freeze great, and can be thrown into almost anything.

I do! That is actually the one thing that my mom can do well. She makes an amazing sweet kugel.

Thanks for the ideas, everyone.

ummm.. i guess i dont.
but its probably because i've never heard of it before...  :-\\\\

You can freeze cooked chicken carcasses for making soup... all the bones, skin, fiddly bits of meat, etc.

It's a yummy, sweet noodle casserole that's a staple in most Jewish households.  Love it for breakfast - actually made one last weekend!  It's much like meatloaf in that every family has their own version, but the basic ingredients are the same.  Here's a link to a basic recipe: http://www.cooks.com/rec/view/0,1632,154175-247195,00.html

You can make a savory version, but why bother? ;)

Except for the brown sugar, that is exactly my mom's recipe. Oh, I love it so much, the noodles that get all crunchy around the sides!

Quarter-Gill, it is definetly worth a try. We would have it with brunch along with bagels, lox and cream cheese, fresh fruit, and other goodies. The savory ones are nice with a simple roast, but I like the sweet one much better. It is ultimate comfort food.

A shepherd's pie would be good, but a beef one rather than vegetarian or lamb (my dad doesn't like lamb, this isn't a kosher thing). Anyone have a good/easy recipe?

I took a look at the recipe... it does look good!
Although if i made it, i would leave out the nuts & raisins.
