Brekkie - Yummy and Quick
« on: March 19, 2006, 10:38:40 PM »
I got a recipe for these flapjacks and they went over well for breakfast.  Make them the night before, b/c they're pretty crumbly when they first come out of the oven.  I 'translated' it somewhat from grams (except the butter) b/c I hate using a scale, so play w/it a bit (e.g., if it looks a little too wet after you chuck in the porridge, add more):

150g butter
1/2 cup caster sugar
3 tbs honey
2 cups porridge oats - I used normal ones, not 'quick cook
.5 tsp baking powder
cinnammon - it's good w/'Mixed Spice', too
2 mashed bananas

Melt butter, sugar and honey in large saucepan.  Remove from heat.  Chuck everything else in and stir to mix.  Press into greased 9x13 in pan and bake in oven at 180 till golden - about 15 mins. in our fan-assisted oven.

MMMMMmmm.

It's REALLY easy.  You only dirty up one pan and a bowl to mash the bananas.  That's why I like it.   ;)

If you let it sit overnight, you can slice it into bars.

Aillidh also thinks they are 'biscuits'.   :D
