Canned Mandarin Segment Cake Anyone? HELP!
« on: June 14, 2006, 10:31:43 AM »
 ;D

Okay this is an odd one... way back in my memory.. I remember a cake (ice box cake.. I think) that used those tinned mandarin segments.  I am pretty sure they were folded into whipped cream and used as a topping for the cake...

anyone know of this recipe?  I think it's 1970's????

Try www.allrecipes.com   :)   It works for me every time.

You can try the extensive search where you put in certain key ingredients - that might help too.

That's a Pig Pickin' cake!   :D

http://baking.about.com/cs/cakemixes/a/pigpickin.htm

a.k.a. Mandarin Orange Cake
from "Dessertly Decadent" Vol. 1 Issue 7
1 yellow cake mix
11-ounce can mandarin oranges with juice
4 eggs
1/2 cup vegetable oil
9-ounce carton frozen whipped topping, thawed
8-ounce can crushed pineapple, with juice
3.4-ounce box instant vanilla pudding

Preheat oven to 350 degrees. Grease and flour three 9-inch cake pans. In mixing bowl, combine cake mix, mandarin oranges, mandarin orange juice, eggs and oil. Beat for 2 minutes with electric mixer. Pour into pans and bake for 20 to 25 minutes or until cake tester comes out clean. Cool in pans for 5 minutes, turn out of pans and finish cooling on wire racks.

In a mixing bowl, combine whipped topping, pineapple, juice from can and vanilla pudding mix. Frost between layers and on top of cake.

Yep...cake is a whole food group for me!  :D

I don't know it it'd work for this recipe, but one of Nigella's recipes calls for custard powder in a cake and filling and it worked just fine for that.

Mmmmmmmmmmmm, I want some!
When I was 5 years old, my mother always told me that happiness was the key to life. When I went to school, they asked me what I wanted to be when I grew up. I wrote down ‘happy’. They told me I didn’t understand the assignment, and I told them they didn’t understand life. ~ John Lennon
