Sweet potato chips

I made these using gillian mckeith's receipe and they rocked....i'm just curious how others do it....as they were quite crisp but a bit mushy still

i blanched for 4-5 mins then i tossed in olive oil and rock salt and baked 30 mins at 200....i turned the grill on the last 5 min to crisp more

they rocked!

I've tried a few different ways to make these, but they were always a bit mushy.  I'll have to give your way a whirl, sounds yummy!!  We even tried to make crisps with them ages ago, but had the same problem.  We found frozen chips on the grocery the other day that were sweet potato, but they were still soft after cooking them.

Just made them last night...

just sliced thin using the box grater.  Spritzed with non-fat olive oil spray.  Sea salt.  In oven for about 25 minutes. Could have been in there longer, but I was hungry. 

I think frying would get  them crispy, but then they wouldn't be very healthy.
