Chicken Noodle Soup
« on: February 28, 2007, 12:11:35 PM »
I have been craving Campbell's Chicken Noodle Soup for a while but have been unable to find it.  I don't like the condensed stuff, I like the chunky ready to eat ones.  I have concluded that if I want some, I'll have to make it myself.  I haven't found any good recipes online and I was wondering if any of you had any you could share!  I know it won't be just like Campbell's but that's OK :)  TIA

June

June, I don't have a recipe, but I can highly recommend
Loyd Grossman's Chicken and Vegetable Soup,
which comes in pouches and can usually be found at any of the large grocery stores here.  It has good, hearty chunks of chicken, carrots, etc., concigle pasta, and is the best chicken noodle type soup I've found here.  It's ready to eat, i.e. not condensed.

(and, unlike Campbell's, it has no MSG!)

:)

Knorrs packets of chicken noodle are also nice. It's more like Lipton soup back in the US in packets but still yummy and nice when you're not well

When I was 5 years old, my mother always told me that happiness was the key to life. When I went to school, they asked me what I wanted to be when I grew up. I wrote down ‘happy’. They told me I didn’t understand the assignment, and I told them they didn’t understand life. ~ John Lennon

This is how I make my chicken soup, and as I recall, I got the general idea from another UKY member some time back.

Take some chicken pieces (breasts, leg quarters, whatever parts you fancy) & brown them in a little oil along with v roughly chopped onion, celery, carrot, garlic if you like it, salt & pepper, maybe some thyme, sage and/or other herbs you want.

After that has browned & the veg have started to soften, cover with water.  (Here I sometimes have my own homemade chicken stock out of the freezer, so I would put in my stock instead of water, then add more water if needed.)  Bring it to a boil, then cover & simmer for however long you like -- it'll be awhile though because you want it to cook until the chicken starts to fall off the bones.

Then fish all the chicken out with a slotted spoon, clean it off the bones, and chuck the meat back into the broth.  Add as many crunched up tagiatelle-style egg noodles as you want.  Let it cook until the noodles soften & serve.  (Season throughout to taste, of course.)
Ring the bells that still can ring
Forget your perfect offering
There is a crack, a crack in everything
That's how the light gets in...

i make my own a lot when i do a roast chicken

clean all leftover meat off carcas and bones
chuck into pan with chicken stock cubes, cellery (tops and bottoms sliced), Carrots, onion, and any other veggies you feel like. i throw in tons of herbs (dried) AND boil for a long time.  i'll throw in macaroni shapes at the end....
i love playing around with it!!!!!

I shouldn't have read this thread...now I am craving some chicken noodle soup!  I LOVE soup and it's been a staple in my diet since the beginning of my pregnancy.

I wasn't feeling well on Monday so had the DF make me a HUGE vat of homemade chicken kneidlach (Matzo Ball) soup.  It was devine.  I had three bowls on Tuesday when I was home sick.

I think I'll buy a roast chicken (for ease) and put it on low with all the ingredients I would normally in the slow cooker tomorrow. You can never have too much of soup. Being that I have some serious health stuff going on due to mold at the minute, hot soup never sounded so good :)
