tuna noodle casserole!
« on: April 14, 2004, 10:09:26 PM »
I just made this for the DF a week or so ago and he really liked it (you never know!). Anyway, on her last trip here, Mom had brought those 'light and fluffy' Pennsylvania Dutch egg noodles which I used and have half a bag left. Has anyone found anything comparable over here for when I run out? I know there's tons of pasta shapes here, but I think the noodles are better - lighter. Ideas? I can live without them of course!  :)

When I was 5 years old, my mother always told me that happiness was the key to life. When I went to school, they asked me what I wanted to be when I grew up. I wrote down ‘happy’. They told me I didn’t understand the assignment, and I told them they didn’t understand life. ~ John Lennon

flat noodles like that are fairly easy to make from scratch since you can roll them out with a pin and don't have to worry about getting them through a machine to cut them. You can use a ruler and  pizza cutter for instance.

When you cook the noodles fresh... yum!

I get egg noodles at Sainsburys and Lidl and they seem to work just fine.

But not the Chinese ones - I made that mistake!  :P

I have not been able to find the egg noodles like the ones in the states that are used in the cassarole, I have used the bow tie noodles in stead and they seem to work almost as well.

Peedal, are the noodles at Sainsburys the fresh thicker italian ones actually intended for pasta or are they dried ones? I guess I was a bit surprised that you couldn't find a good noodle selection here since they are used to much in German and other continental cooking.  :)

I usually buy the Buitoni tagliatelle (they're dried).  It has a little egg-shaped sticker on it!  :D  I've found it to work best in the stuff I used egg noodles for in the US - like stroganoff and such.

I posted the link because I can't seem to post just the picture!  ;)

I can't find my recipe for Tuna Noodle Cass.  Anyone have one to share!  I've now gotten totally in the mood to cook one tomorrow night!

I'm sure there's variations but I just cook up a bunch of noodles, throw in 2 cans of tuna (mostly drained), 1 can cream of mushroom soup, a cup of peas and then top with bread crumbs or crushed potato chips. Bake at about 325 until hot through and crispy on top. If I''m not mistaken, there's a recipe for this in the forum somewhere that's a bit more exact. I was the bane of my home ec teacher's existence as I rarely measure anything!  ;D

Thanks for the recipe!  I'll try it tomorrow night!  I'm not a measuring person most of the time either - makes for a fun outcome sometimes!   :o
