salami storage?!

We bought a really nice milanese salami at Costco yesterday. It's a whole one - about a foot long and meant to be sliced very thinly and eaten with cheese and olives. It says to keep in a cool place but doesn't specify if it should be refrigerated or if storage is different once you've cut into it. Obviously we aren't going to manage to eat the whole thing immediately so we need to know the best way to keep this. Anyone have any idea?

Don't put it in the fridge!  It will ruin the flavour if kept too cold.

There's a lot of info there that's new to me.  We never kept sausages in the fridge... but we did have a cold room.  I had no idea that kids shouldn't eat some types.

Your best course of action might be to slice off what you'll use in the next few weeks and freeze the rest.

It really depends on the Salami...

We keep our dry cured chorizos, fuet, salchichon (both types of salami) hanging on the inside of our cupboard on hooks... if they have that white covering they are usually fine.  Slice off the exposed bit each time you get ready to have some and it should be okay.  There are some that recommend you keep them in the fridge but they usually say that... also once sliced. 

You do want the storage to be as dry as possible so far away from humid bits of your flat/house.

Yes, it has the white covering. So even if we have cut it we can just hang it? I know the US/UK hygeine nuts would say refrigerate, but I doubt that's how they're stored in Italy or Spain! Our house is quite dry so we should be ok as far as humidity goes.

Yep just hang it... ours have lasted since December with no problems...

they will get drier with time though...

I brought back some packaged off the shelf sliced Gallo salami that said refrigerate after opening. I think I probably had it for 6 weeks and then mold grew. It is not quite the same scenario, but there must be something to the humidity idea.

it went fuzzy around the sides. I just cut it off and ate it.  ;)

My old Jewish granny used to always have a foot long salami hanging in her pantry. The end would get a bit dry but you can just cut it off. Does it have a string at the end?
Im so jealous as I would LOVE to get my hands on one of those salamis!

Maybe. I remember it was Kosher and had a star of David on the outside skin. We used to cut half inch chunks off of it!Lovely!
