Meatball recipe

Does anyone have a tasty meatball recipe??  I tried Jamie Oliver's and  Delia Smith's recipes for meatballs and I was dissapointed w/ both.  They lacked flavor and the meatballs were tough.  Thanks in advance!

I've never used a recipe, just add the spices that I prefer, chopped onion, garlic, either beaten egg or bread crumbs to bind, then brown them in a little oil, then cook them in sauce. I did some for my hubby the other day, and they were AWESOME. I did them in a curry type sauce.

firstly, you need to start with good quality ground beef...the best I've had is the black angus beef from waitrose...fabulous stuff! I usually use all beef, but it's good to sometimes use about 2/3 beef and 1/3 very good quality ground pork.

Anyways, the beef (and pork if you like!), salt, pepper, a bit of garlic powder and some italian herbs (whatever you like, but they can be left out!), an egg to help bind, finely minced onion and green pepper if you like, then either cooked rice, bread crumbs, or some quick cook oats as a filler. Mix well with your hands, then roll out into balls...I tend to make them about 1/2-3/4 inches, then into a large pot of boiling water: Do not overload the pot! Do a few at a time! They will float well when they're done. Use a slotted spoon to remove and put them into another pot or into your crock pot, then pour over your favorite sauce and let them simmer about 20 minutes on the stove or for the day in the crock pot...perfect for throwing onto spaghetti or making a yummy meatball sandwich topped with grated mozzarella!!!

hmmm, I used egg AND breadcrumbs cuz that's what the recipe called for.  I wonder if that's why I found them to be tough.  I'll have to give it a try again this weekend.

my favorite is the best recipie cookbook (cook's illustrated)

it calls for bread (w/o crusts) to be soaked in buttermilk, then mixed with eggs, meet, spices, onions, etc.  it kept everything really lovely & moist.

I don't use a recipe either - I just add stuff in until I get a consistency I like. I do use egg and breadcrumbs, but I tend to go light on the breadcrumb. I use whatever meat sounds interesting and season accordingly - lamb with cinnamon and cumin, pork with thai curry paste, etc. Nigella has a good lamb recipe - I can't recall which book it's in though. I'll look when I get home.

I also only brown them in a pan and then let them finish cooking in tomato sauce.

Mmm. Now I want meatballs for dinner. LOL.
