I needed yellow cake mix for a pumpkin cake I made at Thanksgiving. My sister sent me this recipe. I think it's from a Duncan Hines cookbook. If you have a fan oven, I would cut back on the baking time, and bring the temperature down a few degrees.
Yellow cake
2 1/4 cups all purpose flour
1 1/2 cups sugar
1/2 cup shortening
1 1/4 cups milk
3 1/2 teaspoons baking powder
1 teaspoon salt
1 teaspoon vanilla
3 large eggs
1. Heat oven to 350 degrees. Grease bottom and sides of 9 X 13 pan with shortening and lighly flour.
2. Beat all ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on high speed 3 minutes, scraping bowl occasionally. pour into pan.
3. Bake 40-45 minutes or until toothpick comes out clean.
