I know I've seen parsnips in the US (Maryland) but it may have just been mostly around Christmas.

If there's a Whole Foods near you, you might be able to get extra fat from them.

Thanks! I know I'm overstressing, I"m trying to relax about it! I'm a bit of a perfectionist though, so it's hard.

I am still in the US and I have seen recipes that call for parsnips, but I just haven't seen any.

The nearest Whole Foods is 45 minutes away, otherwise I might look there next time.

We're having a late dinner, so I"m just getting ready to start cooking. I know that I'm definitely my harshest critic. I'm feeling a lot better about it though.  :)

Thanks.  :) We're having a few people over too, so that's part of why I'm a little nervous. I don't want a horrible meal to disappoint everyone!

So far the bread pudding is finished and the roast is in the oven!  ;D

Well, I did it!! I made my first roast and everyone loved it! DB said it was brilliant and he understates everything.  ;D

My roast potatoes didn't turn out as crispy as I wanted and my yorkshire pudding had a bit of a problem because it didn't have enough room when I was cooking it, but it all still tasted great! I also made a bread pudding with caramel sauce for dessert.

One of our friends who came over works with a guy from Wales who was telling him about the puds and he got so homesick and jealous that we were having a Sunday roast!

I hear you on the difficulty of finding parsnips in the US! You may have more luck in the fall and winter, when they're in season.

LoL He definitely enjoyed it! Actually, the friends we had over mentioned wanting to rotate Sunday dinners. That should be fun if we do that.  :)

The bread pudding is all gone. I made so much food, but we really don't have much for left overs! Just a little bit of the meat and caramel sauce!  :o Otherwise, sure!  ;)

I'd never had bread pudding before, I liked it. DB had always had it with custard on it and thought the caramel sauce was a nice change.
