Philip's first birthday is right around the cornere (  :o ) and I'm going to make him a cake.  Right now I'm leaning towards a hummingbird cake recipe that I found in my sister-in-law's Cake Doctor recipe book - but I'm still open for suggestions and would love to have some extraordinary cake recipes. I would like to do it all from scratch even though I've never done it before, it can't be that hard, right? Right? And I don't think it matters, but I'll be baking it in a star-shaped tin. TIA!

NUT!  You've moved back to the land of mile long cake aisles and you want to bake a cake from SCRATCH!!!  Good Lord Woman!  :o

STRAWBERRY SHORTCAKE     
     
 


2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup butter, cold and cut into chunks
7/8 cup milk

Serve with:

creme filling, confectioners sugar, strawberries and strawberry sauce, a sprig of mint for garnishing
Mix and sift together dry ingredients. Working shortening with fingertips or a pastry cutter as you would make a pie crust or biscuits. Work quickly and keep everything cold.

And liquid gradually and blend only enough to make a soft dough. Turn out onto a lightly floured board. Roll lightly to 1/2" thickness.

Cut into 3 inch squares or with a round to 1/2" cookie cutter, or cut into six to seven inch circles for large shortcakes.

Bake in a preheated 450°F oven until shortcakes are crisp and very light and color, and this will depend on what size shortcake has been cut; the smallest been cooked in as little as 10 minutes or less, and the largest requiring 15 to 20 minutes, depending on your oven. Keep a sharp eye out and watch constantly to avoid scorching.

When done, remove from oven and allow to cool on wire racks, then split into halves as soon as possible.

Serve with a creme filling of whipped cream or pastry cream and top with fresh strawberries, strawberry sauce, and chocolate shavings.

Sprinkle with confectioners sugar and garnish with a sprig of fresh mint.




Carrot-Pineapple Cake 
2 1/2 cups sifted flour
2 cups sugar
1 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
3 beaten eggs
3/4 cup cooking oil
1 cup crushed pineapple (drained)
1 tsp. vanilla
2 cups grated carrots
1 cup chopped nuts

Lemon Glaze:
1 cup sifted powdered sugar
1 tsp. lemon juice
1/2 tsp. grated lemon rind
2 tbsp. milk

Cake: mix all dry ingredients together. Add eggs, oil, pineapple, and vanilla to dry ingredients. Add carrots and nuts. Pour into greased and floured angel food or Bundt pan. Bake in over at 325 degrees for 1 hour, or until cake tests done. When cool, top with lemon glaze.
Lemon Glaze: mix powdered sugar, lemon juice, lemon rind, and milk. Pour over cooled cake.

The strawberry shortcake that Alisha posted is pretty close to what I make.  Instead of making a filling, I take fresh strawberries and crush them by hand, then add a little bit of sugar to cut the tartness.  The crushed strawberries make a lovely juice.

I bake the shortcake in two round tins, let the cake cool, then put some strawberries/juice on the first cake layer, put the second on top of that, then add the rest of the strawberries on top.

This is a nice cake in that you can control the amount of sugar you are giving Phillip.

For Niall's birthdays, I've been making homemade gingerbread cake.  Again, not overly sugary nor full of fat.  Niall's birthday is close to Christmas so gingerbread makes sense because good strawberries aren't available at that time.

I also make angel food cake and do the same with strawberries.

Well. the strawberries aren't great this time of year... but in the US, it's much easier to get good frozen ones. Though, of course, they don't hold their shape well.

There are loads of great recipes for apple cakes that you can also control the sugar amount in. Angel food is great and there are also chocolate angel food recipes!

i got some AWESOME strawberries at waitrose this week.  maybe from chile???? (i think) they were long and thin and reeeeed.

amazingly good!!! an on sale! (£1 off).

i love cake with strawberries and creme.  my wedding cake was white cake with a whipped creme frosting on the outside, with the strawberry and creme on the inside.

Heaven.  and so light.  i wonder if the bit we saved will be any good?!  If not, i'm going back to the bakery to buy another one!  :)

Alicia that carrot pineapple cake sounds really good - and I never thought about doing strawberry shortcake. Our local grocer has loads of strawberries right now, though I don't know if they are any good. Hmm...

four weeks working in a paediatrics ward ...you are guaranteed to deal with kid's birthdays while in hospital. Those recipes are the ones that the dietitian recommends to parents that want to bring a cake into the ward....luckily I get a taste a slice  ;D

I love strawberry shortcake and I tend to make those for mates birthdays as it's lovely to make. I tend not to do the filling either and chop strawberries to make a filling with a bit of sugar it's divine. I take some cream and whip it till thick and have some strawberries sliced and adorn the top. I am making some strawberry cupcakes for the spring egg hunt....yummy. Tescos are having a sale on strawberries but Co-op sells them later on for less.
