Vegan matzo ball soup and potato latkes?

Call me "meshuge"    but after months of curries and stir-fries and veggie bangers and mash, I really feel like cooking up my British hubby a real Jewish meal.  Except for me it's gotta be vegan.  I know I can find recipes online, but I thought I'd see if any of you girls (or guys) have any tried and true recipes.

I'd like to make matzoh ball soup and potato latkes.  Any other ideas to round out the meal would be welcomed as well.  Too bad I it's not possible to do a vegan "gefilte fish".  Or is it?

Sorry I can't help as I'm nowhere near vegan but I haven't had a decent Jewish meal in about 15 years! I have gotten gefilte fish and other stuff from Ocado but it's not the same as my grammys homemade stuff 

Thanks anyway, Pebbles!  I haven't really had a real Jewish meal in years as well--vegan or otherwise. 

My Bubbies weren't really such good cooks (neither was my mom!) so I don't even have recipes to convert to veggie.  It was all Manishevitz and out of a box or a mix with them.
