We sometimes make a beef and noodles dish with leftover roast. Just take the broth from the roast if you have any or use some canned beef broth, cook noodles and drain, shred the beef up and mix in with the noodles and add some broth, heat through. It's simple and yummy. Good if you have any mushrooms to toss in too.

Thanks! I'd never heard of some of these things. DB's also trying to cut back on his eating, so we're having some leftovers where we'd never had them before.  :)
You're right!  :)

Rissoles were a leftover standby when I was a child, and my mother never had a food processor. Just use a good knife (and I know you have one!) and mince up the meat finely with everything else.

Edited to add that chicken rissoles are good, too!

Thanks! Yeah...the knife is so good that DB cut himself really badly cleaning it yesterday. Of course he was doing the dishes at 11:30, so off to the hospital at midnight when we have to get up at 5:30! Luckily he didn't need stitches after all, but we figured it was best to get it checked out. He did have to get some of those strips that hold it closed though.

I found a Delia recipe called rissoles.  You take the left over roast, an onion, parsley, pinch of cinnamon, breadcrumbs and an egg, mince it together in a food processor (or else do it all by hand which would take ages), form them into patties, coat with seasoned flour and fry them in a pan with just a touch of oil.  I found them to be better than they sounded, and a good way to make leftovers stretch.

I made these tonight with part of the leftovers. DB loved them. I thought they were ok, better with some of the leftover gravy on top of it. I actually think I'd like it better without the cinnamon. DB ended up topping his with some cheese, ketchup, and putting it on a bun. I did just use my chef's knife and it did work out just fine.

Now I have to think about which recipe to use for the rest of the leftovers!
