Anyhoo, if they're the right noodles, dunk in boiling water, cook a bit, drain, cool.
I usually put something like this on them, but lots of stuff is fine: prawns/other shellfish, cooked and cooled. Lime juice, chili peppers, garlic, salt, galangal if available (ginger if not). Some vegetables, anything that looks good. Then quite a bit of cilantro. Let the stuff sit in the juice for a while, then call me.
