Today I made orange-date muffins which turned out pretty well. Tomorrow I'm making pumpkin apple spice muffins so I can have both kinds in the freezer.


Many, many, many days after I said I was going to make those pumpkin muffins, I finally did. And they are AWESOME!! They aren't overly pumpkin-y and they have chunks of apple in them with a streusel topping. I even lowered the sugar called for and they turned out just fine.

argh!  i had two sweet potatoes come in my veg box, and so eureka- i'm making those muffins that sound amazing. 

unfortunatly, i assumed the recipie would be for cooked/mashed sweet potatoes, so i threw them in the oven with my wedges last night.

i can't find a good/lowfat (using applesauce instead of oil kind of thing) online that uses mashed SW.  any suggestions?  i have a pumpkin bread recipie that i may make into muffins, but i like the idea of bulking them out with oats, whole meal flour, etc.

You can use them cooked/mashed.  I have a pumpkin recipe somewhere that uses cooked pumpkin so sweet potato would be a good sub. 

The thing about muffins, is they're so versatile and you can do whatever you want.

I've used sweet potatoes as a straight sub for a pumpkin pie recipe, so I don't see why you shouldn't sub them for pumpkin muffins. 
I refuse to answer that question on the grounds that I don't know the answer.
