Noodle Kugel (for my fellow Jewish girls)
« on: March 08, 2008, 11:12:54 PM »
I had my lovely sister visiting this week and she and I were DESPERATE for some delish dairy noodle kugel, so my sister dug up this recipe and it were "reet tasty" as they say in the north. I used the thick wide noodles from M&S (but I think you can use pappardelle from any supermarket, just break them up) and made this. It was AWESOME, my two year old loved it also.

8 ozs medium noodles, cooked and drained
1/2 cup of butter (1 stick)
4 eggs
1 pint (2 cups) sour cream
1/2 cup milk
1 tsp vanilla
1 cup sugar
1/2 tsp salt
1 cup yellow raisins, soaked overnight in orange juice and drained
2 tbsp cinnamon sugar
In a 9 x 13" pan, melt the butter. Add the cooked noodles and toss them in the butter until they are completely coated.

Beat together the eggs, sour cream, milk, vanilla, sugar and salt until mixture is well blended.

Pour the egg mixture over the noodles and spread the noodles evenly in the pan. Sprinkle top with drained raisins and cinnamon sugar, (raisins can also be mixed into noodle mixture).

Bake in oven at 350 degrees F for 1 hour. Cut into squares and serve warm.

That sounds delicious, but DH doesn't like sweet kugels so I'd have to eat it all myself (hmmm...).

That looks like a fun one to try! I'll do it next weekend and post back.

Thanks! To you and your sis.
And if you threw a party
Invited everyone you knew
You would see the biggest gift would be from me
And the card attached would say
"Thank you for being a friend!"

Thanks for the recipe. My husband has been obsessed with kugel since my mother made it at the brunch she held the day after our wedding. I might have to give this a try.

I haven't had noodle kugal in YEARS! I'm low carbing right now but maybe I'll attempt it one day!

Thanks!  I loooove kugel but have never made it so will have to give it a try!
I refuse to answer that question on the grounds that I don't know the answer.

Looks good! May try it before the chametz ban kicks in next month
Good things come to those who wait...a really long time.
