I have 6 small Cox apples...

...that don't have a good texture for eating so I want to bake with them. I'm thinking a cake rather than a pie.

Anyone got a recipe to share?

Drool, apple cake...

I wanted to try this one out:

But I haven't figured out the right settings on my oven yet, so I haven't tried-

I know it doesn't have whole apples, but you could kind of make a homemade applesauce first and then do it

I've a recipe for apple muffins somewhere...low fat, very tasty.  Let me know if you'd like it.

2 medium sized cooking apples (or 6 small coxes  ;) )
8 oz wholemeal flour (I think i used white plain)
pinch salt
half tsp ground cinnamon
1 tsp baking powder
6 oz butter
2 oz raw brown sugar
1 beaten egg

core and dice apples. combine flour, salt, spice, baking powder in a basin. rub in butter until mixture looks like fine crumbs then add remaining ingredients.  place heaped spoonfuls onto a greased baking sheet and bake at 190c/375f/gas mark 5 for 20-25 mins until golden.

I have some apples to use up, too. I think I'll try that out today!
