Veggie Cornbread Recipe

Hi,

I made a cornbread last night that turned out really nice, so I thought someone might like the recipe. I made it for my 14 month old as another way to sneak veggies in his food, since he is such a carb addict!

1 cup Flour
1 cup Cornmeal (polenta) found at Tesco
3 teaspoons Baking powder
1/2 teaspoon Salt
¼ cup Butter softened
1  Egg; beaten
1-2 grated courgette (zuchini)
2-3 grated carrots
1 cup milk
1 small carton apricot yogurt

I baked it in a loaf tin for maybe 30 min in a 180 oven. I googled "carrot cornbread recipe" and then modified the recipe I found by omitting the sugar and buttermilk in the original recipe and adding the yogurt and courgette. My little one can't stop shoveling it in (and neither can I)!  :)

Great idea... my son is in a serious food rut right now. The HV thinks it's his was of exerting control with the arrival of his baby brother and the chaos that is our house these days. Veggies are virtually absent from his diet and if he could, he'd live on Cheerios... :P

Thanks for the recipe! How small is that carton of yogurt? One of the kiddie sizes or what?

The yogurt carton was small. It was one from the French-style whole milk yogurt from Tesco that comes in small cartons in a 6 pack. But I bet any kind of yogurt would work! I think the yogurt  makes the cornbread just sweet enough that it appeals to my boy.

Yep, I have to put cooked grated carrots and cougette into everything ds eats, because he won't eat them on their own!!

Sounds good - what does a "cup" equate to?

I worked this out once, it's about 250g or 1/2 lb or 1/2 pint.
