Need to bake a lot of stuff, but short on time!

Hi!

I volunteered to do baking for my friends wedding reception. Not the cake, but lots of baked goods for the buffet..Her wedding is Aug 1, but I just found out that our moving day is Aug 1 as well! Needless to say, I'll have so much to do with moving house, but I don't want to let my friend down.

I'm looking for ideas for things that I can make that will be relatively quick and easy and can be made in large batches. She expects about 60 guests and I'd like to make 3 different things. I am going to do no-bake peanut butter oatmeal cookies because those are easy and yummy.

Any other ideas?

BAke things in bars, like brownies so you don't have to do lots of little things.
Buy some mixes and doctor them up.

Cheese straws are a nice savoury "cookie". :-)

Mini quiches.  Dead easy, and they are freezable, so you can do them now then defrost when needed.

Do you have a stand mixer? If you have one, you can whizz through several batches of cookie dough when you have some time this week, shape them (I use an ice cream scoop) stick them in the freezer, then right before the do, shove them in the oven.

I love to bake, and since I got my kitchenaid mixer, I love to bake even more!!!

7 layer bars, lemon bars, flapjacks. All easy to do.

Cupcakes?  A little fiddly, but they look really nice!  You could even do multi-colored frosting...
