Thanks!

I wound up using a can of diced tomatoes and adding tomato puree to it.  Turned out to be about the same thickness as if I had used plain sauce.

i'm allergic to garlic and onion, so it makes buying pre-spiced sauce a nightmare.

Oh I know! It's horrible trying to eat out, too.  I mean, I never was a huge fan of onions, but garlic is in everything!

The thing with cooking with onions isn't so much for the flavor of the onions, but that onions deepen the flavor of the dish you are making.

For a long time I didn't cook with onions or garlic (my ex was a Hare Krsna and they don't eat onions or garlic) but in their place I used hing (also called asfeotida) which is what all the Hare Krsna people used in place of onions and garlic.

It's not just for Indian food, so maybe you could give it a try in your pasta sauce?

Hmm, I've never heard of hing...I'll have to research it.  Do you know if it's a bulb?  We're not sure at this point if I'm allergic to all bulb-type foods or just onion and garlic, so I've been avoiding all other bulb-based foods, too.

Tomato puree is tomato paste.
I think paste is quite a bit thicker than puree.  And yes it can come in a tube (handy if you only need a little)  Can't remember the brand name though.

I find that what they call tomato puree in the UK is pretty comparable to US tomato paste. But I didn't use tomato paste much, so I could be wrong...
