Fennel

Has anyone ever cooked this?

In my quest to find new vegetables and new things to eat with my new diet I decided to pick up some fennel.

I have found a recipe that I'm going to use. But I was wondering what people thought of it. Does it taste similar to anything else? How do you cook it?

Fennel is a big fave of mine, you can either cut it up (discarding the core) and roast it in the oven with some evoo for like 20 minutes, or you can do my favorite thing ever with it, I slice it thinly and pop it in a bowl with evoo, rice wine vinegar, salt & pepper and a crushed clove of garlic. Its like a salad that way, I love it, but after eating raw garlic, my husband won't come near me.

It has a thick, almost sweet licorice-y taste.  I used it in a cole slaw once and it was great!

It's great mixed with blood oranges (or any kind really) and made into a salad or salsa to serve with fish or chicken. I add onion and some lime and olive oil to mine.  It's good with mixed roasted veg too.

Nice raw in salads, or stir-fried. As said - a sort of licorice taste

Thank you all!!! I will keep this in mind for next time. The recipe I decided on using calls for it to be grilled with lemon juice and then served with mixed olives. I'm going to have this with grilled chicken soon.

Ok this is my thought on fennel... It has the texture of celery and tastes like you're eating sambuca.

I think I should have cooked it just a little more then I did.
