Really neat trick for parathas.....
« on: May 25, 2009, 05:03:03 PM »
Inspired by QG's question about naans. Well, long story short, my hubs came home the other day with some yummy frozen stuffed parathas. One pack was a veggie mozzarella cheese stuffed with peppers paratha, and the other mince. Now, we've made homemade before, but could never quite get the dough right, that nice light and flaky texture. That's when it dawned on me, I  just happened to have some justroll pastry dough in the fridge. Not the kind that's pre-rolled, but the block you have to take a chunk from. I did that, took a chunk, rolled it out, put it on a hot skillet, and would you know......it was the same exact same thing!! So now, we make our own parathas, stuffed or plain, and they are perfect, and also cheaper. Same technique also made a yummy samosa.

I buy frozen parathas in Asda... just throw them straight from the freezer into a hot pan, and it's like, a minute till they're done and ready to have all sorts of yummy stuff rolled up inside, or just buttered and eaten like that...  :)

exactly, I LOVE them!! But the justroll pastry does the same thing, and we stuff them before frying them....roll out one partway, spread on filling, top with another rolled out dough, and then roll the whole thing out, stuffing and all......if we're doing the stuffed ones, that is.

Im surprised that the pastry works just the same, because the parathas are in layers... i take it it's the taste that's the same, but not necessarily the texture?

That's the trick!! I buy this, at Tesco.....

and as it's a block, it's in layers, but you can't separate the layers. You just tear off a chunk, and the texture is the same as the frozen parathas that are so yummy!! It's what they use for those frozen ones, puff pastry! My hubs was AMAZED, and so was I! We had one frozen store bought one, we'd already fried, then I went and got out the puff pastry block, rolled out a bit, fried it, don't have to fry it in oil either, just roll it out with enough oil so it doesn't stick to the rolling pin, or the surface. The texture is exactly as the frozen store bought one.

Yah, way yummy. Here we were trying to duplicate the storebought frozen paratha dough, and they are made with puff pastry! Who would've thunk it??

Yay! Just make sure you use a bit of oil when you roll them out, that dough is sticky!

Been doing these for a few days now, and they're fab!
Did pepperoni & cheese, then did bacon, cheese & ranch dressing... YUM!
