'cereal bar' recipes
« on: September 05, 2009, 06:37:49 PM »
My boys both love cereal bars. We usually buy Kashi brand, but basically, I mean the type like a Nutri-grain bar.

In an effort to save money on our grocery bill, and control potential allergen foods for Sammy, I'd like to try to make some sort of home made version. But, I'm coming up with the wrong stuff when I search for recipes. We go through a lot of them so I'm sure home made will be cheaper.

When I search for 'cereal bar recipe', I just get recipes using cereals (i.e. rice crispy treats, cheerio-bars, etc). I guess I want something like a flapjack, but not so sweet, with a fruit topping.

Any ideas... either recipes or better search terms?

TIA!

When I was 5 years old, my mother always told me that happiness was the key to life. When I went to school, they asked me what I wanted to be when I grew up. I wrote down ‘happy’. They told me I didn’t understand the assignment, and I told them they didn’t understand life. ~ John Lennon

ETA: I searched for "Nutri-Grain Bar Knock-off recipe"

From here:

it doesn't look too nutritious, but maybe this could give you the basic idea of them to create your own?

Nutri-Grain Bars      1 pkg yellow cake mix    3/4 cup butter    2 1/2 cups quick oats    12 ounces preserves or jam    1 T water   Preheat oven to 375. Melt butter. Combine cake  mix and oats in a large bowl; stir in the melted  butter until the mixture is crumbly. Measure half  of this mixture (about 3 cups) into a greased   13x9x2-inch pan. Press firmly into pan to cover  the bottom.   Combine preserves and water; spoon over crumb  mixture in pan, and spread evenly. Cover with  remaining crumb mixture. Pat firmly to make top  even.   Bake at 375 for 20 minutes--top should be very  light brown. Cool completely before cutting into  bars.

I would search for recipes under Flapjacks rather than cereal bars...

You also could try homemade fig newtons, but replacing the figs with another fruit -

I've been wanting to try making my own as well as my son loves the Organix ones they sell here. I found this recipe which I might try out tomorrow. Its not that far off from the ingredients on the Organix ones and you could probably play with the recipe quite a bit to make it to your own tastes. I'll post how they turn out if I make them....

Thanks everyone. I might try a thin flapjack base with a pureed fruit layer and then some sort of topping. I don't want too much dried fruit as it, ummm, doesn't agree with them! ;)

My Mom used to make something in the '70s that was sort of what you're looking for.  I searched for 'granola jam bars' and found this http://www.recipezaar.com/Black-Raspberry-Granola-Bars-289766 which I think is in the right direction. :)

That looks really good, Mindy! Thank you! Might have to skip the brandy for the kids though!! Or maybe not.... ;)
