To Die For Chocolate Cake

I thought I'd post this as I had so much luck with it in the UK!

MOIST CHOCOLATE CAKE   

1 1/2 cups flour
1 cup sugar
1 teaspoon baking soda
1 teaspoon salt
1/3 cup cocoa powder (Green and Blacks worked very well!)
1/2 cup vegetable oil
1 cup water
1 teaspoon vinegar

Mix all of the ingredients well with a mixer. It should be brown and smooth and free of lumps. Bake at 350°F for 25 minutes - but check before that as it isn't so nice if it's over-baked.

This makes one layer for a double layer cake. I used an 8 inch pan. I didn't realize it would only be one layer so made the second one immediately after. I assume you can double the recipe but  would wonder if you needed to double the baking soda and vinegar.

I used Sarson's distilled white malt vinegar. You don't taste it at all. It just reacts with the baking soda to make it light but not dry.
