Success! Again, thanks for everyone tips and advice. It worked.

I did the coffee slurry bit. Then drizzled a fair bit of Bailey's directly on the bottom half of the cake. Middle layer was a double cream with Baileys & icing sugar and the top was butter cream frosting with Bailey's. Topped with a Bailey's chocolate for each slice.

It went down a treat. Everyone LOVED it. Even my 6 yo boy who said he wanted this for his birthday cake. I won't say it was light but it was not as heavy as I thought it would have been and the Bailey's taste was just right for a Bailey's cake.

If anyone tries something like this, the recipes from the links provided used 3 tbsp of Bailey's in the cream filling and used the cream in turn to flavour the frosting. Don't bother. This, IMO, would yield a very weak and unsatisfactory taste.

Go for at least 6 tbsp in the cream and 8-10 tbsp in the frosting (basically don't use any milk just Bailey's  ;D  ). It gave a really strong taste but was not biting. As everyone said the frosting was the best they'd ever had.




Oh MAN! This sounds amazing!!! I may just have to try it. I don't normally bake, but if there's Bailey's involved, I think I could try!!! ;D

It really is a doddle. It's decorating that I find a challenge.

Do you need a cake recipe? I just made a box standard chocolate swirl cake and added a cup of very strong coffee (decrease the liquid accordingly).

For the filling:
10oz double cream
6-8 Tbsp Bailey's Irish Cream
2 Tbsp icing sugar

Whip the cream till peaks form. Stir in icing sugar and baileys. Whip again for 10 seconds.

For the icing:
200g butter
about 2 cups icing sugar
10 tbsp Baileys

Whip the butter and slowly add icing sugar. Add Bailey’s and mix. If dry add more Bailey’s or a tbsp of milk. If wet add more icing sugar

Let cakes cool completely. Over night is best. Make two cakes or one big one an cut in half.

On bottom layer carefully spoon Bailey’s onto sponge randomly but ensuring a  good covering. Probably about 10tbsp of Bailey’s. Next time I will probably use about 15 tbsp.

Spread filling on bottom layer and place top layer on.

Optional of pouring Bailey’s on this. I didn’t.

Apply icing thickly and spread as for any other cake.

Garnish with Bailey Chocolate Truffles

Then PIG OUT!
