Last weekend I made a delicious pie with the leftover roasted chicken and some serrano ham. Sometimes I do a cottage pie with mashed potato top, sometimes I just make pastry and do a regular pie. I love having leftover roasted chicken, there really is a lot you can do with it. I usually make only enough veg for each meal, so that really hasn't been an issue, but bubble and squeek is always good.  ;)

I make everything with leftover chicken!  :-X I find it SO convenient on days when I am working.

I like to mix it with pasta and cream soup or cheese sauce and various veggies and bake with cheese on top. It would also be good with potatoes.

Any stir fries or curries, just throw in shredded chicken with your veggies. It's not exactly the same, but it is still delicious!

I also make homemade stuffing and make a chicken and stuffing bake. Mix chicken with gravy and a splash of milk (or cream of chicken soup if that's your thing) and veggies, put the stuffing over the top and bake until it's toasty and the liquid is bubbling.

Also great for Enchiladas!



I have lots more and will probably add more as I think of them! I'm interested to see what people do with their other leftovers though. :)

Vegetable bhajis are another good way of using up left over veg.

Do you have a favourite recipe for these?  I try, but mine just come out tasting like oddly flavoured latkes.

I keep a big bag of East End Pakora mix for just such emergencies, you mix it with a tablespoon of water to create a thick batter then add onions, veggies or if you want some chicken chat, leftover chicken, then fry & drain thoroughly on kitchen paper -  They're really good for leftovers, better than the onion bhajis at the takeaway :)

It's about £1 for 300grams which is Loads, I use about 70grams a time and makes 6 big onion bhajis.

Do you deep fry them or can you shallow fry them in a pan? I think we'd really enjoy these!

I sort of half shallow/deep fry but in about an inch or so of oil, maybe a bit more in a saucepan.
I turn them over with a slotted sppon to cook the other side and make sure they dry out on kitchen paper, but frankly as long as the oil is hot enough they're really not greasy, much less greasy then ones from a takeaway.

Thanks! We have a deep fryer that my MIL gave us (god knows why) and as I'm hoping to get rid of it at some point, I don't want to mess it up just to make some bhajis! I could put a small bit of oil in a saucepan and do it that way. Thanks again!

I don't have a deep fryer either! Seems weird to have a big thing of oil standing around in the kitchen.
The only things I fry are things like this (spring rolls etc), or tempura, and I just put some oil in a wok for that.
