freezing ricotta?

Google is failing me.

I got ricotta cheese this week to make 3 cheese lasagna, but the container has a use by date of the 1st. I'm unlikely to have time to do it today or tomorrow, so can I freeze the ricotta? Google gives me a mixture of yes and no.

I'd rather not waste the money having to bin it and buy new.

We've got a tub in the freezer as it was on a 2 for 1 offer. Should be ok if you are going to cook with it

Honestly, I wouldn't bother freezing it unless you don't think you'll use it for several weeks.  It won't magically go off at midnight on the 2nd; in fact, most people throw away food that's perfectly good because they are misinformed about the purpose of sell-by and use-by dates.  Have a look at this article, it's very informative:

Ricotta is similar to cottage cheese.  If it's kept sealed and refrigerated I'd wager it'd still be good a week or two after its date.

Hmm I don't think Cream Cheese is the same as Ricotta in terms of keeping fresh, Ricotta is made from gently heating whey, whereas cream cheese is heated past 60 degrees and is made from pasteurised milk. You can keep sealed cream cheese for weeks past it's expiry date but Ricotta will start to go clumpy and split and you may get mould growth if you keep it too long.

Still Tasty says Ricotta can be kept 3-5days after the expiration date, it also has tips on how to freeze it if you still want to do that.

thanks for the responses.

I'm really wary about soft cheeses. Harder ones like cheddar I'll keep until green and fuzzy; soft cheeses I throw on the use by date.

Ended up chucking the tub in the freezer. We'll see how it ends up lol.
