Applying for Spouse Visa - question(s) about financial statements and employment

Long story short - My boyfriend and I are getting married this summer and I will be moving to Wales. I am currently employed with a regular income but will be quitting my job a few months before he and I get married so that I can move back in with my parents rent free. Will being unemployed at the time of the visa submission reflect poorly on my application?

Also, I read that we would need to send 3-6 months worth of bank statements in with my application. What sort of dollar amount are "they" looking for on these statements? Or are they just looking for proof of regular income?

Tried to simplify my questions as much as possible without loads of detail...I have a tendency of getting "wordy".

No it won't.  Unless you plan to continue doing your US job in the UK, then your income is irrelevant.
