Boxing Day Meal?

We will be at a friends for Christmas Day festivities so we won't have leftovers...We are picking up the kids and DH's parents to bring over Boxing morning to be here as the kids open presents ect...I wanted to do a sunday lunch type thing nothing to heavy as DH says everyone will be sick from the day before of over eating lol

Any easy peasy ideas?
I was thinking crockpot roast beef this way I can enjoy the day and just mash up some potatoes, steam some carrots and broccoli and call it a day!

Anyone have ideas (recipes)?

Could you do crock pot pulled pork? Then have chips/dips/guacamole and just heat up some tortillas?

Or maybe some chilli and have rice/tortillas/chips/dips for everyone to help themselves.

Or you could do a big pie, maybe chicken/leek/bacon or steak/ale, use shop bought pastry and it's nice and easy.

How about a glazed ham? So many offers on gammon joints around at the moment and it's super easy to do, you could serve it with coleslaw, potatoes (au gratin :D) and salad. That would be pretty light and any leftovers could go into sandwiches :) It's minimal work for you as well :)

Williams Sonoma has fabulous recipes; there are some for slow cookers.  www.williams-sonoma.com.  Or you could google Lipton's onion soup or maybe just Lipton's recipes for some easy crockpot beef recipes.  You'll need Lipton's dry onion soup, but maybe Knorr's onion soup would work just as well.  

Whatever your prepare, I am sure it will be delicious and appreciated.

My MIL usually does beef bourguignon, or steaks with peppercorn sauce on Boxing Day.  :)

My best friend always does a ham with baked potatoes & cole slaw. Almost everything can be made in advance, and its so yummy!

My one stepchild and my FIL are picky people but I know beef goes down easy with everyone but I LOVE the pulled pork and I think I can pull that off - hmmm maybe

You could always do something fun like canapes/appetizers/nibbles  :)

we're doing a pork joint that we can slice up for batches plus various nibblies.
