Chuck roast??

I must have received ten different answers regarding this question: What is a chuck roast called in the UK?

I have found "chuck steak" in most markets, but have not seen a chuck roast. I have been told that there are "braising roasts" but I have not come across these either, but have only found "braising steaks." So, any ideas?

What is a chuck roast called in the UK?

Braising steak is called chuck steak in the US.  Your confusion is understandable thought as the meat is only differentiated by the actual cut.  Typically a rectangular cut that's about an inch thick (and sometimes containing parts of the shoulder bone) is known as a 7-bone steak. (This referrers to the shape of the bone which resembles the number 7).  With the 'steak' most people grill or broil it. 

The thicker version is sold as a "7-bone roast" or "chuck roast" and is usually cooked as you would a brisket or pot roast.

I have noticed that the "7" is really not very apparent here because most butchers fold the meat over differently, so don't scan the meat aisle for 7's--- you will be there a long time!

Oh and also--- my most helpful tool when I moved here was this picture of two side shots of cows, marked with the UK and US cuts of beef.  I never knew what I was buying and sometimes I ended up with these horrible cuts--- now- i know!  I keep it in my shopping jotter that I make my lists in.  If I'm out and see a cut on sale, i just check my diagrams to make sure I'm not buying the shin or some major artery! :)
