Burritos
« on: January 04, 2011, 01:25:34 PM »
I need some help! When making burritos I have always used the Old El Paso spice mix packet, I love it - i know its lazy but i think it tastes really nice and hubby likes it too.

However, Old El Paso have now discontinued their packet :( All you can buy now is the beef and bean dinner kit which comes with a sauce packet instead of a spice packet. I've not tried it but i dont like the dinner kits as we dont like the salsa in them so therefore its a waste of money for us.

So my question is - can somebody please tell me how to make burritos from scratch? I would be forever grateful as im missing them already!

Thanks!

I usually do a blend of cumin, garlic powder, onion powder, chilli powder, cayenne, and coriander. And salt of course. I think that's about it, but I always do it on the fly. :) Frying some diced onions before adding the beef is good, too!

I just sautee a chopped onion and a clove of garlic, then add the beef, then add salt, pepper, cumin, chili powder, a pinch of oregano, and smoked paprika until it looks and smells like tacos (LOL... you have to figure out what's right for you, I just toss it all in, not much salt though!) and then once the meat is browned off, I add about half a cup of water and let that cook down, just to meld the flavours together and tenderise the meat a bit. It really doesn't take as long as it sounds and it's even better than the packet (no weird stuff in there you can't pronounce!)

I would if I could get my hands on some!  :\\\'(

I sometimes add in some hot sauce, but usually the chili powder and a pinch of cayenne make it plenty hot enough for DH, who isn't as used to spicy food as his Texan wife.  ;)

Discovery does a nice chipotle chilli paste, I got it at Ocado I believe, tescos also does dried chiptole chillies in their ingredients section - http://www.mysupermarket.co.uk/tesco-price-comparison/Dried_Vegetables/Tesco_Ingredients_Chipotle_Chillies_14g.html

Discovery paste - http://www.ocado.com/webshop/product/Discovery-Chipotle-Paste/37023011?from=search&tags=|20000&param=chipotle&parentContainer=SEARCHchipotle_SHELFVIEW

Whenever I make texas chilli I make a "tea"/stock by soaking the dried chillies overnight with other spices :)

No fresh ones though, I use scotch bonnets :D (just one!)

My big tesco has dried chilies (chipotles, haberneros, etc) of all kinds in the "fancy spice" section.  So maybe you will be able to find some online for delivery or if you want, I can mail you some  :)
