I posted this on another site since we were talking about eating low-carb (which I do, and have for years) - it's a recipe I made up last night that was so good I thought I should share it with you guys. You all. Y'all. You-ins.
These are, of course, in US measurements, but Im only guessing at them anyway since I just threw things in and didn't really measure. But you'll get the idea:
Sara's Magical Cauliflower
1 10oz bag Cauliflower
4T butter
3T sour cream
1/4 c heavy (double) cream
1/2 c shredded parmesan cheese
white pepper
garlic powder
salt
Boil the living he11 out of the cauliflower. When it's soft as soft can be, drain it and then put it back in the saucepan. Smoosh it up and add the sour cream, butter, and heavy cream. Smoosh it some more, it will have the consistency of mashed potatoes. Then put it in a baking dish. Sprinkle the spices & parmesan cheese on top and broil until it's bubbly.
OMG.
I put chicken in the baking dish too and broiled the whole thing until the chicken was done - and sprinkled minced garlic & white pepper on the chicken... this was FANTASTIC. I love cauliflower anyway and this is a great new way to eat it. Plus it's a god-send for low-carbers! Whee!
