I do variations of a crustless quiche that's really easy to do. whisk four eggs, mix with 250g tub of cottage cheese (plain or flavoured).  throw in chopped cooked meat or veg or cheese depending on what you want.  Cook about 25 minutes at gas mark 5 until firm in middle and golden.  Serve warm or cold.

My husband has an egg thing - anything that is overly eggy - in taste or texture, is a no-go for him.  Just plain eggs?  No way.

However, he will eat & likes Spanish omelette (more potatoes with the egg as binder), or breakfast burritos - with good mixture of spicy sausage & scrambled eggs...as long as there is something mixed in to make it less eggy.

Me, I lurrrrrve me some eggs, any old way!  :)

I hated eggs for a long time because my mother was a brunch freak.  Every weekend both days we ate brunch, which was breakfast food at about 11am.  She'd even slip in breakfast for dinner if she could get away with it.  I was egged out by the time I was 20.  I'm only now starting to try them again.  I do lots of casseroles or huevos or breakfast burritos that have eggs in them and a few other recipes.  At the moment, I'm eating them quite a bit because I go to work at 1 which means I have to have eaten and leave the house by 11:45am, so ironically, brunch is the best option.   :P
