Use Immediately on a jar of sauce?

Usually, the jars of sauce that I buy say something like "Once opened, refrigerate and use within three days."

It is usually fine if I keep it a little bit longer than that.

I used some curry sauce last night -  a new brand I've never used before - and used about half the jar. (I cook for only two people.) I put the remainder in the fridge.

I just noticed that instead of the usual "Refrigate after opening", the jar says

ONCE JAR IS OPENED USE IMMEDIATELY.

Does that mean I have to throw the rest away now?  

If so, I won't be buying that brand anymore.

I have another partially used jar of sauce in the fridge which says that it can be refrigerated.  There isn't much of a difference between the ingredients in the two sauces. The one that can be refrigerated says it has no preservatives.

I just use common sense. Smell it and taste it. If it's fine, then it's fine. But I wouldn't leave it hanging about in the fridge for months or anything.

Meh, I never pay attention to that stuff.   Food companies are overally crazy with the use by, best by dates, IMHO!  I use something until it smells or tastes funny or grows mould or looks off.  That's my story and I'm sticking to it! I've not made myself ill from my theory before, so it works!

I lie somewhere in the middle of pb and chary.  Also, I sometimes freeze what's left of a jar of sauce if I don't think I'll be using the remainder anytime soon.  I've done it with tomato sauce, not curry sauce but I'm sure it will be fine if you decide to freeze it.

Ice cube trays to freeze sauce works really well if there's only two of you. You can heat from frozen in a pan.

I always have a whole tray of frozen cheese sauce, whenever I want some I pop a couple of cubes out and heat it, then throw in some spinach or cooked brocolli/cauliflower for a quick side dish/dinner or I sautee lardons and shallots, then throw in cheese sauce cubes and add cooked pasta. Yummers.

Hah. If I'd actually thrown away even half the food those sell by/use by dates told me to, I'd have been broke and hungry.

Common sense works fine for me, too.

Yup, always look on the positive side  ;D

You can also freeze in freezer bags, in silicone baking trays, in  yoghurt pots, blah blah blah.

Or you can just throw cautition to the wind and eat it.

Huh, never thought of ice cube trays--good idea!  Even if you end up needing all of it, the individual cubes will defrost a lot quicker than a block from a plastic container, freezer bag, etc.
