I'm no expert, but I wouldn't risk it without "permission." Technically even if no one "found out" you would be in the country past your visa dates and so you'd be here illegally. I don't think it's worth the risk - if something happened while you were here illegally, or if anyone noticed when you re-entered the U.S. it could cause trouble for you next time you apply for a visa - fiance or whatever....

But I'm glad you're having a fun trip!!

Shala, I don't recall the exact specifics of your story but are you here on a visitor's visa that expires Nov 10? Or is it just a 6 month visitors visa? If it's the latter, I would guess you could extend your trip but I think there are others here who know your story better and will have some advice for you. Still, given your complications, I'd be a bit concerned about changing anything...
When I was 5 years old, my mother always told me that happiness was the key to life. When I went to school, they asked me what I wanted to be when I grew up. I wrote down ‘happy’. They told me I didn’t understand the assignment, and I told them they didn’t understand life. ~ John Lennon

I'm half agreeing with Anne.  If it takes you outside the terms of your Visa, DON'T, you'll be making trouble for later. But if you got a six month visa and you would still be leaving with the six months, heck, go for it  ;) .  So glad you're having a great time.

If you did change your ticket, there *might* be a cost involved to the airline, and you'll certainly find that flights in the new year are very busy

Considering that you've already been refused leave to enter on one occasion and shipped back to the US, I would advise strongly against trying to "put one past" immigration.  You don't want to be refused another visitor's visa in the future, when they see you overstayed, do you?

Don't overstay your visa. Ever, evereverever. But if your visa is a 6 month multiple-entry visa (meaning you can come and go as you like in those 6 months) - then go ahead and change your ticket as it isn't breaking any rules. Just don't overstay your visa.

You are, no doubt, aware that IND are planning to re-introduce exit controls later this year?  Did you notice that they have already begun refurbishing the IND stations at the departure gates in Heathrow and Gatwick?

So I guess we need your input now:  do you have a 6-month visa, or a 2-month one?

Since you've already been denied entry once, I'd advise you against overstaying a 2-month visa.  If you and Patch are at all serious, you'll probably NOT want a denied entry AND and overstayed visa on your fiancee/spousal visa paperwork!

Yep, sorry.  I know you told immigration you were planning to go for 2 months 3 weeks so assumed that's how long the visa was for.

But to answer the question you asked in the very beginning:  Yes, they WILL find out.

If the visa in your passport gives you leave to enter for six months, you can stay here six months even though you said your trip was only going to be until 10 Nov.  If you only got a visa good for the period of time that you asked for (2 mos, 3 wks), then you have to leave when that time is up.  Period.
