Lamb Hearts

Hi

I heard that lamb hearts are very good especially as a casserole.  I saw this recipe and was wondering if there are other ideas for cooking lamb hearts?   :)

Canterbury Casserole

Ingredients

    2 Lambs hearts
    2 tbsp Flour
    Salt and Freshly ground black pepper
    1 Onion, chopped
    1 Leek, chopped
    1 Carrots, sliced
    2 sticks Celery, sliced
    1/2 small Swede, diced
    300ml Beef or Vegetable stock
    2 Bay leaves
    1 tbsp Fresh mint, chopped
    1 tbsp Fresh rosemary, chopped
    1 tbsp Cornflour

Method

    Dice the lambs hearts removing any tough material.
    Mix the flour and seasoning together and coat the meat in the flour.
    Fry the seasoned meat in the casserole dish over a high heat for 5 minutes, or    until browned on all sides.
    Add the vegetables to the dish, along with the stock and herbs.
    Place the covered casserole dish into an oven at 170 degrees C and cook for an hour and a half, stirring occasionally.
    Mix the cornflour with a little water, and stir into the casserole.
    Return the casserole to the oven for a further 20 minutes, and serve the casserole immediately with either mashed potato or herby dumplings.

That's so weird...our local radio station Radio Stoke...did a segment on hearts last week and they were doing recipes for all sorts. They mentioned that lamb hearts were especially good in stews. They did a steak and ale pie and used Ox heart and the man hosting tried it and said, unless someone told him it was heart, he wouldn't have known. I'd be interested in trying it...I completely think if I can eat a steak and enjoy it, I should be able to at least try other parts of an animal.

phatbeetle, yes it does sound divine.  I've been busy lately so hadn't been able to try out the casserole recipe for lamb hearts.

kbeech06 & phatbeetle, here's a Tesco recipe for 'Slow braised, stuffed lamb hearts' - http://realfood.tesco.com/recipes/slow-braised-stuffed-lamb-hearts.html .  Waitrose also sells lamb hearts with herbs which can just be cooked as is in the oven.  I just heard from customers at Waitrose and co-workers that lamb hearts are a good meat.  :)

Might have to try this as I saw some in the local market today. Maybe I'll wait til my step-daughter returns to the States though!

TykeMan, yes indeed!  Lamb hearts are definitely worth trying out with various combinations of cooking techniques and solid food ingredients such as braising, bake/casserole, and stew.  Lamb hearts are also featured in British, Irish, and Moroccan recipes.

Cadenza, churrasco de curacao (Brazilian BBQ chicken hearts) sound really delicious!  

Lamb or chicken hearts could also be marinated in chopped garlic, olive oil, salt, and pepper for a couple of hours.  Sauté the chopped garlic and onion in olive oil until soft.  Add the hearts and sauté over medium heat until done, stirring occasionally.  Alternatively sauté hearts halfway and finish in the broiler.  :)

You can also combine lamb hearts (cut into 3/4" cubes), paprika, cumin (ground), black pepper, cayenne pepper, salt, vinegar, vegetable oil in a bowl and cover with plastic.  Marinate for at least 30 minutes, up to several hours in the fridge.  Place lamb hearts on skewers and grill or broil (medium heat) about 10 minutes on each side, or until the meat center is pink with no red juices.
