UK spouse as a beneficiary on US retirement accounts?

I currently have 3 separate investment/retirement accounts in the US.  I'm a good 20 years from being about to access them.  How do you add a UK spouse as a beneficiary as if they don't have a SSN?   Can a UK spouse be executor of the will of a US citizen?   What are the tax repercussions?
