Hmmm, my bad. Italian sausage recipe if you prefer homemade or can't get it....(see all of UK)

1 1/2 tsp salt
3 1/2 tsp paprika
2/3 tsp garlic powder
1/3 tsp fennel seed
1 tsp pepper
1/4 tsp + crushed red pepper flakes
1 pound of ground lean pork

Add all above ingredients to pork and mix thoroughly, cover and refrigerate for at least 24 hours.
Use in cooking, or freeze for future use.

One VERY old Sicilian style spaghetti recipe coming up!!! I have tried to simplify my uncle's family recipe for canned instead of all fresh ingredients.

1 pound of Italian sausage
1 pound of lean ground beef
1 large chopped onion
2 cloves minced garlic
4  8 oz cans of tomato sauce
1   6 oz can Italian tomato paste
1 cup water
1- 1/2 tsp salt
1 tsp dried parsley
1/4 tsp ground red pepper

Directions:

Cook sausage and ground beef in large skillet over medium heat, stir until meat crumbles. Add onion and garlic and sauté for 4 min or until meat is cooked. Drain and set aside in separate bowl.
Combine tomato sauce, tomato paste, water, salt, parsley and pepper in skillet, simmer on low heat for one hour stirring occasionally.
Add meat mixture and continue to simmer for at least two hours until mixture thickens.
Serve over cooked pasta and top with parmesan cheese.

This is pretty much how I've always made sauce (since fresh tomatoes are so much $$) - nice to know it's close to traditional! :)

So I have one to share.  As a southerner, I use sweet pickle relish a lot.  Use it in tuna salad, potato salad, macaroni salad, on top of hot dogs, etc.  was distressed when I could only find it on Amazon and very expensive for a condiment I used so often, so I started making it myself and it's easy.

One English cucumber, one small onion, one red pepper, cut into chunks.  Put into food processor and pulse until chopped up, but still identifiable.  Mix in 1/2 teaspoon of salt and place in fine coloander to let liquid drain,  squeezing out as much liquid as possible.

In saucepan, put 1/2 cup white vinegar, 1/2 cup sugar, 1 teaspoon mustard seed, 1/2 teaspoon celery salt, 1/2 teaspoon dill weed.  Bring to boil, then add cucumber mixture and stir in.  Turn heat down to simmer and allow to cook down until thick.  Pour into jars.  This makes about 2 1/2 small jars of relish.  It's really good.

If anyone is interested in my southern potato salad, or mac salad, let me know.  I also make an excellent southern style barbecue sauce.
